A Recipe Blog: because everyone loves them!!

Two Beer Risotto!

Admit it, you must of seen it coming?  I changed ‘Positive Kitchen’ Face Book group to Positive Camping Kitchen, and have been asking for fun camping recipes.  Nek minit there could even be a cooking YouTube clip, hell ya, think I’ll do one just for the fun of it…oh wait, it’s all just for the fun of it!  Life is just for the fun of it!  Hell ya, I feel a cooking YouTube clip coming up!

I was pondering (my new favourite word, pondering, very appropriate for out here, I do lots of it!)… What to cook after, all the chicken and bacon we brought last week had been used up, and we haven’t caught any Bluebone for a few days?  Messages of recipe/food ideas of cheap, easy, not many but long last ingredients would be much appreciated everyone!  Obviously FaceBook is easiest for most people, so please leave message on group linked above, or simply below this blog.  Thanks!

Johnno and I have been to together for close to 20 years; close to as in 10 years but it feels like 20!!! Haha, no seriously, we have been together for 19 and a half years!  For all those 19 and a half years, Johnno has told me that he doesn’t like Rice Risotto.  This was always surprising to me, since he loves all other rice so much, fried rice, rice pudding, saffron rice, he will eat plain boiled rice with nothing on it by the plate load, he even eats Congee (Asian breakfast dish of soggy rice in the rice water).  So what is it with Rice Risotto, I never did find out, and it turns out that he does like it, he just had to try MINE!! Haha took me 20 years to get him to try it but last nights dinner was such a hit I’m doing it again tonight (because it was so yummy, and so I can take photos for this blog).  

Now lets be clear, I’m no whiz in the kitchen, I can’t promise correct terminologies, or even spelling for that matter ;) , I don’t know the origin of Risotto’s name or where the recipe came from, and I’m not even going to bother googleing it.  Actually, I don’t even know if what I made is really Risotto, or a pilaf, or just soggy rice.  But hay it tasted great, and it only took 2 beers to cook: once Johnno had almost finished the plate he said ‘Yah but it takes too long to cook doesn’t it’, as he his last stand to why he never wanted it.

My understanding of Risotto is you slightly fry the rice in butter and oil at the beginning, with what ever spices you wish to flavour it with.  I’m not sure why this is done, can someone please comment below and tell me? I know that you put a little Oil in to stop the butter from burning. Anyway we have some Gee in the fridge that needs to be used up.  I tried to use up all the bits in our fridge before leaving home, but what was left I just packed in our camping fridge and am now using up as we go.  I also have heaps of Chocolate Buttons if anyone has an idea how I could use them up?

So instead of butter I used Gee and it made it amazing silky shinny tasty Risotto!!  My new secret ingredient.

 Two Beer Risotto:
(Beer is for drinking while cooking, if you drink too fast you might need a 3rd, or a 4th?  We are in conservative, no shops, holiday mode, so drink at a slower than normal ’Derby’ pace).

Slowly fry in pan:  
GEE or Butter if you prefer
Oil (to stop butter burning)
Onion & Garlic, any other flavours you desire on the night.

I had planned to put Cheese in at the end of cooking, but it turned out so incredibly tasty that I didn’t need to.  But that is why I didn’t put much other herbs of spice’s in at this point.

Add Rice and gently fry till lightly browned.

Slowly, little bit at a time, add stock.  I used vegie stock because we have heaps of it in power form, you can obviously use what ever flavour you wish, or just use water.

As the water/stock soaks into the rice you add a little more, little bits at a time, letting it soak in, than adding some more.  Stirring all the time, so as not to burn or stick.  Um I wonder if you are actually meant to stir risotto??  Anyway I did, and it turned out amazing!!  I reckon this is why Johnno had the impression that it took so long to cook, or maybe if don’t correctly Risotto does take ages to cook?  I don’t know I’m just calling it risotto anyway.

So after a while when the Rice looks like it’s at it almost full cooked size, stop adding liquid. Add a little dash of Pepper, or what ever you think it needs after a little sneaky taster. Turn gas to low, sit down have a beer and let Risotto thicken up as the liquid (stock not your beer) continues to soak into rice.

Embracing the beach bum life

Taking everyday as it comes

before the neap tides, while we could still fish off the point.
After over a week of overcast weather we are finally fully recharged!  Fridge working fine, generator has been put away, solar panels have fully charged all the big batteries, and all the camera batteries.  Wahoo.  We even flew the drone today since it was the first fine, clear, still day!

I’ve started writing this as the sun starts to set on our first cloudless evening.

We had decided before leaving Derby to stay close to town, Broome, for a while to make sure we have everything we need.  Not having a ’test run’ with the full camper up, and solar power working before we left, we wanted to get it right before we moved on to unknown camping spots.   After our 2 weeks here at Quondond, with numerous trips back into Broome, it’s safe to say we are on our way to getting it all right!!  Thankfully the sun has come out again anyway, but in the mean time we brought a new generator, to replace the one that didn’t work, and Johnno worked out a more efficient way to wire and charge the battery system.  I’ve sorted and resorted and still don’t have a place for everything, so have just given up, and everything is still piled on the tables (glad we brought plenty of them, tables), and it will just get piled into the car when we move on.

Johnno gave me a hard time when I shaved my legs before Anzac weekend (knowing we had visitors coming).  He said ‘You aren’t truly embracing the beach life’ haha, so I’ve stopped washing, stopped shaving, oh but Shaved my head!!  So much easier with no hair!

The point and the beaches were pretty crowded over the long weekend, so once our friends left we just kept out of the way in our little camp for a couple of days.  Then once everyone had gone back to work we went out exploring, thanks to the sun coming out!!

We drove along the bush track behind the sand dunes, from here to Barred Creek.  We were hoping to find a new camp spot along the way, it will not be long now before the caravans turn up to Quondong point and want to camp right next to us in this wonderful open space we have our camp set up on.  We are prepared for this, another reason we came to Quondong now, instead of later, so the thought of where to move next has been lingering.  Unfortunately we didn’t find anywhere that suited with the dogs: Pup’s back leg has gotten worse, he wouldn’t be able to get down the rocks.  We thought his leg would get stronger with use, but it seems to be doing the opposite.  We plan to take him to the vet on next trip to Broome, and get it cut off, ops I mean looked at!!!

With the clear skies and calm days has come the cool nights and cold mornings!!  Today we dug out the long pants and warm jumpers that I had packed at the back of the trailer thinking we wouldn’t need them for months yet.  I’m glad I listened to Johnno and kept all the extra blankets, I wasn’t going to bring them, but we, and the dogs are using them already!!

Neaps tides make it hard fishing for Bluebone off the big Quondong Point rock, today the water never even made it to the rock.  But we had a beautiful relaxing day fishing on the beach right in front of our camp.  In the past we have never caught anything when fishing there, but there are a lot more fish around this year than we have seen in many years here (or maybe it’s just that we have so much more time again now?), so we thought we would give it a try.  No fish, but beautiful morning playing with the dogs and feeding the Eagles.

Johnno caught a LARGE mullet (65cms!!!) in the throw net, which we filleted for the dogs lunch, and gave the carcass to the Sea Eagle, she had trouble carrying it off!!

Rainy Days and Mozzies:

No sundowners this week, just sitting in the wet tent.

I’m so glad I called you on Monday by mistake, holiday head, can’t count Karen, mistaken days with no calendar, got to love that!!  It was shortly after that phone call that my phone went flat and I’ve had no way to recharge until tonight.

FIVE days of rain and cloudy weather, divine yes, but hard work when camping with solar panels!!  We never used to have a fridge when long term camping, or a computer, or GoPro’s that need recharging for that matter (it’s not all about the cold beer!).  So Power was never an issue, it’s something new that we are just learning about.  That’s Ok, that’s  one of the reason’s we wanted to stay close to town (Broome) for a while, to make sure everything was sorted out, all our new equipment.

The Mozzies here have been Monstrous!  I’m scared to go out after dark!!  Actually on Monday night they were so bad that I HAD to drive to Broome the next day to get Bug Spray!!  A restless itchy night, followed by an even worse morning, I couldn’t stand it!!  As it turned out we had to go to town, for more beer, ah no no, I mean because due to the overcast days our solar panels were not recharging the batteries!!  We have a little Generator, so brought a battery charger to run off it, while it was cloudy.  Taking the fridge in the car for our trip into town cooled that off, so I was able to buy more yummy cheese, meat, butter, um the luxuries I thought we would be living without…yes more Beer!!! 

Only problem with all this yummy food that I brought; 5 days of overcast weather, so the solar panels still were not charging batteries…then the friggen genny stopped working!!!  We still haven’t got to the bottom of that problem.  But after two nights of worry about the fridge, up and down checking charge and temps, it was time to do something about it…before the car battery went flat keeping my beer cold…I mean CHEESE and MEAT!!!!

But No, was like this all day!
So this morning after another attempt to keep the little generator running, but it having other idea’s, we headed to town (Broome) to try and fix it.   $600 for a new one, fine, that sounds much better, all I want is to be able to sleep at night.  FUNNY thing about new generators…they have to have oil in them before you start them for the first time!!  Friggen wish the man at the shop had told us that before we drove 50km’ back out of town!!  3 hours driving around and $1,000 spent was a hard enough morning, only to get back to camp and still have the same problem = NO POWER!!!   Oh well, back in the car and back to town we had to go.  Our lucky day!  We were helped out by some friendly locals on our way back into town, only a few km’s from our camp, who gave us a cup of oil, saving us the 100km round trip!  Back to camp, Generator running, batteries charging, fridge with all our yummy food in it still cold.

On the positive, we now have heaps of food, we have been living off BlueBone, so not eating much anyway.  We have enough water so we don’t have to go back to town for weeks.  AND, I got to see my little Bro while in Broome!!  He is a truck driver, and was cleaning his truck in the Broome yards waiting for his next job.  Good timing for me!!  Love you Bro!!! xxx …Missing teeth and all ;)
So apart from the Monstrous Mozzies, and lack of power, (preventing me from making movies and writing blogs),  it’s been a ‘different’ kind of week.  We had plans of snorkelling with the underwater camera, and flying the Drone on the big tides.  Both of which we will still do on the next set of big tides, because we have no plans of leaving here in a hurry!  Our regular trips to Broome now have us set up really well.  As said at the start, it was part of our plan to stay close to where we know until we get our shit sorted!  Now all power machinery has been tested we are happy with that.  We survived our first storm!  The first night we had a few unexpected leaks, and lots of uninvited insects!  But we have sorted out both problems now, we are ready for any weather, and I’ve just sprayed half a can of surface spray! Chemical warfare has begun!

Johnno caught 5 bluebone in 3 days, one fish a meal for 2 people = 5 bluebone meals in 3 days!  If you think we are sick of bluebone?  Obviously you haven’t tried it!!  Our favourite fish of all times, I’m still craving it!  Yesterday Johnno caught the 6th bluebone for the week, it was more the size we used to catch, a two meal fish!!!  Yah!  Half a fillet between us and an egg each, thank-you very much Mr wonderful, beautiful, tasty, Bluebone for another great lunch!!

The time inside has been spent sorting out boxes, rearranging and working out what we need and realising we have a lot of ‘stuff’ that we don’t need!  During our trip to Broome we joined the library, so now have another 5 books each to read!  Who care’s if it rains for another 5 days!!  Um, well us, we can still read in the sunshine!!

Same old, Same old; But Not!

What a weird but wonderful day!

Isn’t it wonderful how quickly you fall into a simple little routine when camping, doing the same thing every day, but yet how every day is so totally different.

Yesterday started the same as most days here at Quondong Point.  Even though we have only been here a few days this time, we have camped here enough in the past to have a ‘Quondong Point routine’: Collect bait on low tide, fish the Point on high tide, sleep, read and swim between tides.  We woke up early, relaxing couple of hours drinking coffee, read our books, porridge for breakfast, then we are ready to move start the day.  

Tide was up to the rock so we headed straight there, with our crabs caught the afternoon before.  Johnno likes to have a few casts of his lure, before setting the hand-line up for bluebone, just to see what is about.  Queenies!  Queenfish were about!  Didn’t take long for Johnno to hook up on his new favorite ‘stick bait’, I’m going to have to get one of those.  I cast my Too Deadly lure around the Queenies that were following the one already hooked, got a few good hits, but nothing stayed connected, maybe it’s my fishing ability, not the lure??

Didn’t take him long on the handline until he had a Bluebone on the rocks either.  So we were heading back to our camp before the tide was even turning.

With the tide right up in front of our camp, we couldn’t resist have a bit of a flick around when we got back.  Bit of little Tervally fun right at our doorstep was an added bonus!  Kept one for the dogs lunch, left the carcass on a big rock hoping to get the Sea Eagles attention.  Later that afternoon I had the best timing, walking out of the tent to see him swoop down, pick up the carcass, then just hang there above me showing off!  Beautiful!!  Only had my GoPro in hand, not big camera, so not the best footage, but still impressive just to have him so close to camp!  
It was a stinking HOT midday that drove us to the beach more than the tent yesterday.  We were getting NO breeze at camp, but the beach had just enough to be cooling, and the water was clear and cool, perfect way to cool off from the unbearable heat!  Turned out to be ‘build up’ heat!  By mid afternoon we were hearing thunder and watching the storm clouds rolling towards us.  I jumped on line to check out the BOM site, sure enough, lots of rain heading our way, not that we needed the internet to tell us that, we could see it coming.

We prepared camp as best we could, closed up all the windows, put away camera and computer gear, attached extra guy-ropes in case it got windy, and packed everything away best we could.  Finally I hung out all the dirty clothes and towels, YAH, free washing day!! Haha, just in time, Johnno was getting smelly!  Then we went for a walk in the rain to collect crabs for the next days fishing.  Great end to a hot day!

Tent didn’t leak too much, was still a restless night with the wind and dripping…on my head!!!  Lucky it’s a big King-sized bed, so I was able to move from the slow torturous drip (that must have only happened twice, and stopped when I moved, because there was no sign of any drips in the morning!)  Slow day today with us both so tired now.  Weird kind of day.  Overcast, solar panels aren’t working so great, so might not even get to finish this blog.  Sea is COLD, so no swimming today, so totally different from yesterday.

We did walk over to the rock, and had a little fish in the wind.  Johnno wasn’t confident, he reckons Broome fish don’t like the wind.  But we had the bait and I haven’t eaten enough bluebone yet, so off we went.  Sure enough he caught me lunch as requested, so I cooked it as promised.

Think I’ll finish this tired lazy afternoon with down loading photos for this blog, then go for a walk to find crabs for tomorrows fishing…another day the same as the last, not!

Oh it’s mid-day high tide tomorrow, I’m going to get the Drone out for a fly around. 

....started raining again before photos had loaded.  Another walk in the rain today, same as yesterday.  Loving the coolness in the air!

Favourite Meal at Favourite Place

Restless nights but Relaxing days;

What a perfect day!  Apart from being so tired after another restless night.  Johnno reckons his cough is starting to get better, but it didn’t sound like it in the middle of the night when he was trying to cough up his innards!  Not that I cared, I couldn’t sleep anyway.  The mozzies came out in force last night, and I wasn’t prepared.  We got a few bites when sitting outside for our sundowner, but not enough to worry about.  I first noticed how bad they were when I went outside later to go to the toilet…didn’t go again for the rest of the night!! Have you seen the movie 'Pitch Black'?  It was like that!!  Don't go out there, don't go into the dark, they are coming to get me!!!
 I was hot and itchy all night, Johnno was coughing continually, so we were glad when the sun started to come up.

After an entertaining breakfast, watching all the mozzies trying to get inside (I killed a dozen that had managed to get in), we headed straight to the point to fish.  

Few cast of the lures, and I was on.  No-where near as impressive as the Tervalley Johnno caught yesterday, but the first fish for the day.

It didn’t take long until Johnno started getting bluebone bites, very shortly after that he had his first bluebone on the rock!!  Wahoo!! 

It was a beautiful morning, slight breeze to keep the bugs away, slightly overcast so not too hot, the water was so clean and clear.  Just perfect.  Not even half an hour went by before Johnno had landed his second bluebone!  Yah!

They aren’t as big as we used to catch, but are the prefect meal size.  We had Bluebone for lunch:

Perfect start to the day!  Both these were caught on hand line,  Johnno learnt years ago it’s the best/only way to get them in.  But after we had our two to eat, he wanted to try on the rod again.   He got a reminder why he uses the handline straight away!  Instantly broken off half a dozen times in a row

  We were glad that we went early, we don’t keep track of days, and had forgotten it was the weekend.  People started turning up to fish as we were leaving, and they've been coming and going’s all day, busy little weekend spot.

We spent the rest of the day totally relaxing!  Reading, swimming, eating, swimming, playing on the beach with dogs, reading some more.  Having a cold beer.  And now about to cook the other Bluebone for dinner.

Due to how quickly Johnno caught the first two bluebone, we still have crabs in the fridge for tomorrows bait….but due to amount of people camping down by the rock, we might go to Barred Creek instead!

1st day at the Point

Our favourite fishing at Quondong Point is for Bluebone (Black Spot Tusk Fish), which we use crabs caught in the rock pools for bait.  Since we hadn’t bothered catching any crabs yesterday on low tide, (we were just enjoying being here and relaxing after setting up camp), we couldn’t fish for Bluebone with this mornings high tide.  We still headed over to the rock for a look, with rods of course!  

A few casts with the Rooster Poppers got some attention but no takes.  Quick change of lure and Johnno was ON!  Wahoo!!! First cast of new lure, first time it’s ever been used, and Fish On!!  Go the Stick Bait!  He was just about to ‘walk the dog’ but Mr Tervalley couldn’t wait that long!  Tight Line, fish running, running, oh no!! Running around the rock!! Hahaha, just our luck, first fish and it’s going to cut the line around the rock.  But No, sorry Mr Tervalley, Johnno has played this game before!  He loosened the drag a bit, letting the fish run, so he could lift the line above the rock.  A little bit of wind, making a little bit of wave, made it interesting trying to get the fish in around the rocks; but experienced Johnno just kept playing the game, until he had Mr Tervalley were he could safely land him on the flat rock below where he had hooked him.  Couple of quick photos, watch out for the waves, and an easy release with the next wave that took Mr Tervalley back to a safe recovery rock.  Yes, of course there will be a YouTube clip to follow shortly, we both had our GoPro’s on.

We spent the rest of the morning while the tide was going out, reading, swimming, and sleeping.  Johnno is still coughing at nights, no where near as bad as the night I almost took him to hospital, but enough to stop us sleeping.  But yet reading a book in the shade, listening to the waves after a little lunch, is a much better sleeping drug than all the cold and flu tablets he has been popping to try and sleep at night.
On that note, I was amazed at how quickly my eye got better.  For over a week it would feel like it was getting better, then get worse again, feel better, then get worse again etc etc.  Then on Wednesday, after our shopping trip to Broome, I took ONE of Johnno’s Cold & Flu tablets, an hour later my eye was better, and has been fine ever since!!  One friggen tablet!!!  And here I was thinking I’d done some kind of serious damage because it wasn’t healing!! 
 I love drugs!!

So after a few hours of sleeping, my chair was no longer in the shade, and I was starting to stink, (I mean get hot) ;)
The tide was half way out, time to go for a walk around the rock pools.  Knowing the cool breeze down my the water would wake me up, and we needed to get bait for tomorrow morning, Bring on the Bluebone!!!

What a wonderful relaxing afternoon, cooling down by laying around in the crystal clear rock pools, while catching crabs, and watching Octopus.  I do love to play with the little Occie.  Such beautiful little creatures those little cephie’s!

We gathered a few nice sized boy crabs (we always leave the girls), ready for fishing off the rock tomorrow.  Will still be taking our lure’s as well, we have seen a lot more fish than usual cruising around, so want to be ready for anything.

Sun is setting, beer is cold.  I’m going to cook Liver and Bacon for dinner, to use it up.  I’m confident we are eating Bluebone tomorrow!!

My Happy Place

Ahhhh!  My soul feels at home.  Not sure how else to explain this wonderful, relaxed, lovely/loving feeling that is tingling though my body and mind.

Somewhere around 17-18 years ago, the very first time we pulled up to Quondong Point I got the same feeling, maybe more excited then, more relaxed now.  Excited then due to finding such an amazing beach and fishing spot, with no other people around!  Relaxed tonight because 18 years later, in adzaxery the same camp spot, we are still here alone!!!  I know it’s early in the season, and soon this wide open grass plain we are current camped on, will be filled with caravans…and we will go hide under a tree somewhere, or move further up the coast.  But for now we sit and enjoy, and reminisced about all the wonderful memories this tiny little part of the world holds for us!

The first time we were here, 18+ years ago, was our first time travelling together, still in the infancy stage of our relationship (we had already had a couple of punch ups, so were over the honeymoon stage).  We had driven rather quickly from Perth, up the whole west coast.  Until we go here to Quondong Point, and just STOPPED!  Suddenly there was no hurry any more, we didn’t want to go any further!  We camped here for a month that very first time, and have camped here long term a few times since then.

Quondong Point is my happy place!  After our first travelling trip together all those years ago, we eventually had to return to work.  Working 7am to 5pm in an Optical Lense Factory (I tinted the lens of perceptions sunglasses), I would constantly day-dream about Quondong Point.  It got to the point that I thought more about here than anything else in life.  I knew I wouldn’t be happy anywhere else.  Johnno had just been offered the job that would set him up for life, big money!!  I said ’sorry mate, I’m moving to Broome’.  He gave up all that he had been working towards, the job that would set him up for life in a very short time, and came to Broome with me!!….To wash dishes at Cable Beach Club!! Hahaha, For all those who ever wondered about our relationship = It’s LOVE!!!

Leaving Willie Creek this morning, all I was really thinking about was how long it was going to take to pack up the camper trailer, then unpack it all.  We haven’t really got all our ’stuff’ sorted out yet, and we are realising we have too much ’stuff’.  

It took around about (I’m not counting anymore) a good couple of hours, to pack up camp.  Only half an hour to drive here.  Then another 3 hours to put everything back up again.  We certainly are not over night campers!!  I’m glad we brought our swag as well, for when we do ’hit the road’.

Once the camper was up, and all the boxes pulled back out of the trailer, it was swim time!!

Knowing that we will be here for at least a few weeks, I’m not in any rush to ’organise’ the camp so much.  Way more important were the Sea Eagles flying over us!  Oh how I love Sea Eagles!!  I sat in front of our tent the rest of the afternoon, watching and taking photos.

We went for a short walk down to the rocks to see how Pup would handle them, he was fine, we will just do little walks to start with.  Then a couple of beers at sunset, while taking more Sea Eagle photos.  I cooked Willie Creek Salmon with fresh tomatoes and Jamie Oliver herbs for dinner.  I’m now listening the waves as the tide comes in…and that is all!! Johnno is hardly coughing!!  I say hardly because he was earlier, but may have just nodded off, having said he has finished his book and not started doing anything else.  


Ahhhh.  I’m in my happy place!!

After writing, but before posting to internet, we went for an evening walk along the dark beach.  Introduced Charlie to the night crabs.  Bliss!!!
